Peanut Butter Cupcakes with Chocolate Ganache Frosting

As stated in my Lemon/Lavender cupcake post, I also made some yummy Peanut Butter Cupcakes with Chocolate Ganache Frosting for the last day of my Fundamentals class. 

This was my favorite of the two recipes as I'm a huge sucker for the whole peanut butter and chocolate combination! 


Peanut Butter Cupcakes
  • 1 stick butter
  • 1/2 cup peanut butter
  • 1 cup water
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 1/2 cup buttermilk
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla

In a medium bowl, combine flour, baking soda, baking powder, salt, and sugars. Set aside. Melt together butter, peanut butter and water over medium-low heat. Stir until melted.  Remove from heat and add dry ingredients and buttermilk. Add the eggs last so that they do not scramble.
Bake at 350*F degrees in a 14-16 minutes, or until a toothpick inserted in the middle comes out clean. 



Chocolate Ganache Frosting
  • 2 cups heavy whipping cream
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vanilla
  • 2 cups powdered sugar, sifted

Heat heavy whipping cream until simmering, then combine with chocolate chips. Let stand 5-6 minutes, or until chocolate is fully melted. Slowly stir to combine, and add in vanilla. Allow to cool to room temperature. 

Add in powdered sugar and mix until fully incorporated, chill in the refrigerator until set.
