As stated in my Lemon/Lavender cupcake post, I also made some yummy Peanut Butter Cupcakes with Chocolate Ganache Frosting for the last day of my Fundamentals class.
This was my favorite of the two recipes as I'm a huge sucker for the whole peanut butter and chocolate combination!
Peanut Butter Cupcakes

Peanut Butter Cupcakes
- 1 stick butter
- 1/2 cup peanut butter
- 1 cup water
- 1 cup sugar
- 1 cup packed brown sugar
- 1/2 cup buttermilk
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 eggs
- 1 tsp vanilla
In a medium
bowl, combine flour, baking soda, baking powder, salt, and sugars. Set aside. Melt
together butter, peanut butter and water over medium-low heat. Stir until
melted. Remove from heat and add dry
ingredients and buttermilk. Add the eggs last so that they do not scramble.
Bake at 350*F
degrees in a 14-16 minutes, or until a toothpick inserted in the middle comes out clean.
Chocolate Ganache Frosting
- 2 cups heavy whipping cream
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vanilla
- 2 cups powdered sugar, sifted
Heat heavy whipping cream until simmering, then combine with chocolate chips. Let stand 5-6 minutes, or until chocolate is fully melted. Slowly stir to combine, and add in vanilla. Allow to cool to room temperature.
